ROSES FOR YOUR VALENTINE?

The perfect finale for a romantic dinner with that special someone! Recipe adapted from Nourished; a Cookbook for Health, Weight Loss, and Metabolic Balance. ROSE-FLAVORED ICE CREAM One of the most memorable desserts I ever had was a tiny scoop of rose-flavored ice cream nestled in the heart of a perfect, pale pink rose. It was presented simply, with no cookie or cake to steal the limelight. There were hundreds of guests at the event, and yet every petal was perfect and the ice cream was…

FRUIT AND NUT TREATS

I’ve been making my own snack foods since cutting out all the likely sources of allergens. Most purchased low-carb snacks and bars contain whey, egg, chocolate, and/or almonds. I found several raw, vegan, and Paleo brands, but most of them use dates and flax to hold everything together. Chunks of Energy, pictured above, are pretty good and the Chia Orange flavor has no flax, but lists dates as the first ingredient and also contains raisins. They have 12 net grams of carbs per ounce (two small squares). I thought I could do better. I kept the…

HEADLINES I’D LIKE TO SEE IN 2014

default image

Space Needle Fireworks, Michael Holden Photography Here is my wish list for 2014. Send me your fantasy headline and I’ll add it. USDA replaces My Plate with Eat Real Food Globe. ADA endorses low-carb diets (for real, this time). Global Climate Change addressed, ocean’s PH normalizes, catastrophe delayed. Electricity generated from urine reduces dependence on fossil fuels, pollution goes down. (We can fuel out electric cars and skip the rest stops. Win–win.) Ancel Keys tried posthumously for mass murder. George McGovern, Senate committee, named as…

TURKEY CRACKLIN’S

The best thing EVER to do with Thanksgiving leftovers! Reserve any extra skin or lumps of fat from the neck and body openings when preparing your holiday turkey for roasting. After your gorgeous, golden-skinned turkey has been presented, admired, carved, and devoured, don’t throw it out; you still have the best part left! Cut away the skin from the back before tossing the carcass in a pot for making bone broth. Slice the skin into strips or squares and spread them flat on a greased sheet pan, adding any reserved fat and skin. If you prefer flat pieces, you can set…

MENU FOR VALENTINES DAY

Here’s what I made for my Valentine: Sliced tomatoes with Fresh Basil, Balsamic Vinegar, and Olive Oil Crispy Braised Duck Legs with Vegetables (from my section in Low-Carbing Among Friends Vol.3) Oven Roasted Asparagus (from Nourished) Cranberry Sauce (also from Nourished) Cherry Pie with Vanilla Ice Cream Everything was really easy (don’t tell my husband). The pie is a cherry version of my Three Fruit pie from a previous blog post here: http://goo.gl/Ztb0c I prebaked the bottom crust and a separate crust round for the top, cooked the…

BRANDIED CRANBERRIES

This was one of three new recipes I made for Thanksgiving this year. I made some more today and put it in jars so I will have enough to last through the holidays. It is luscious, easy, more versatile and even prettier than cranberry sauce. Ingredients: 2 cups (220 grams or about ½ pound) fresh cranberries 2 cups water Sugar substitute equal to 1 cup sugar * 2 to 3 tablespoons brandy or to taste A sprinkle of salt Directions: Wash cranberries and drain well, removing any…

SUGAR-FREE, GLUTEN-FREE, LOW-CARB PUMPKIN PIE

This recipe uses my Almond Pie Crust from Nourished. You can find it here  However the pie in the picture is made with a new one that I’m currently working on. I’ll post it when I have it finalized and written up. PUMPKIN PIE The biggest problem with custard-based pies is the soggy bottom crust. Pre-baking the crust and partially cooking the filling before putting it in the shell is the secret to this rich, creamy pumpkin pie. Ingredients: 9-inch Almond Pie Crust 2 large eggs 1 and 1/2 cups half…

HOMINY SALAD

default image

Here’s a potato-less side dish, just in time for your Fourth of July cookout. The recipe is adapted from one by Martha Hall Foose; hers is made with regular hominy and has 20 net grams of carbohydrate per cup; mine has 6.l grams. Have a great day!  Hominy Salad Ingredients: 1 can (29-ounces) Juanita’s or Teasdale’s Mexican-style hominy 2 cups chopped fresh tomatoes 1 cup shredded cheddar cheese ¼ cup mayonnaise ¼ cup Greek-style, full-fat yogurt ½ cup chopped red bell pepper 4 green onions, chopped…

CHOCOLATE FOR YOUR VALENTINE

I got a lovely box of sugar-free chocolates and an extravagant card today, but I’m sad to say that my Valentine got an I-O-U instead of the cherry pie he usually gets on his birthday and for Valentine’s Day. I’ve been working very hard and just forgot what day it was. Luckily, his second favorite treat, after cherry pie, is anything chocolate, and I have a lot of it around since I’ve been experimenting with some new chocolate recipes. His pie will show up eventually,…

HAPPY THANKSGIVING!

default image

“There is one day that is ours. There is one day when all we Americans who are not self-made go back to the old home to eat saleratus biscuits and marvel how much nearer to the porch the old pump looks than it used to. … Thanksgiving Day … is the one day that is purely American.”–O. Henry, American writer HAPPY THANKSGIVING!
