RASPBERRY FROZEN YOGURT

A delicious frozen treat that can be ready in an flash! Sugar-free and low-carb. Three years ago we planted three dwarf, thornless raspberry bushes. They were a new variety called Raspberry Shortcake™. We had a lot of rain this spring and the bushes exploded with big, sweet berries. We have eaten a lot more than we should have, given them away, frozen them, and made pies, but they keep coming. The good news is, we will have enough for many future batches of my new…

NO BAKE LEMON MINI TARTS: SUGAR-FREE, GLUTEN-FREE, EGG-FREE

Lemon Tarts by Judy Barnes Baker

Note: This is the new and improved version of this recipe. Some of you reported that you had trouble using it as written. I have tested it multiple times now and decided to put up an easier version. Using a small amount of cashew nut butter is true to the character of the Hail Merry tarts, but any nut butter should work as well. (See Notes below for old filling recipe.) NO BAKE LEMON MINI TARTS (new and improved recipe) I found some cute little…

CORNED BEEF AND CABBAGE

I don’t usually think about corned beef and cabbage until I see the seasonal specials in the stores in mid-March. It makes an easy, tasty, one-pot meal; I don’t know why I don’t make it more often. Try my walnut trick to keep the cooking odors from permeating the house and to make the rutabagas taste more like potatoes. (Technically, the following recipe is more like a New England Boiled Dinner, which includes potatoes in addition to beef and cabbage.)  Ingredients: 1 (4-pound) corned beef…

MY FAVORITE FLATBREAD: GLUTEN-FREE, GRAIN-FREE, DAIRY-FREE, EGG-FREE PITAS

I was trying to make egg-free, almond-free tortillas that I could eat with my newly discovered allergies, but I was pleasantly surprised with this recipe. They turned out to be thicker and softer than a tortilla and more like pita bread (except that they don’t separate to form a pocket). I made mine with cashew and coconut flour and a mixture of coconut oil and pasture lard from Fat Works®. GLUTEN-FREE, GRAIN-FREE, DAIRY-FREE, FLAX-FREE, EGG-FREE FLATBREAD Ingredients 14 tbsp. or 7/8 cup (sift before measuring*) coconut flour (98 grams) 4…

WHITE CHOCOLATE PECAN BARK

I made low-carb Christmas cookies for my husband but I’m still on an elimination diet trying to figure out what I’m allergic to. Chocolate, dairy, almonds, eggs, gluten, sugar, and foods that are high in Chromium (which includes almost everything, animal, vegetable, and mineral!) are off limits for now. This is the most innocent treat I could come up with that I could eat. I’ve only made it once, but it was very good. Ingredients:1/3 cup coconut oil1/3 cup coconut manna (may be…

THE PUDDING OF HAPPINESS

Pudding Cups Judy Barnes Baker

My husband counts the pills I put out for him in the morning to be sure I didn’t sneak in anything new. If he doesn’t recognize one, I have to show him the bottle. Once, when my children were small, I overheard my vegetable-phobic son whisper to his sister, “Don’t eat the spaghetti~she put PARSLEY in it!” The only foolproof way I’ve discovered to convince the people I care about to eat things that are good for them is to turn them into foods they can’t resist! I call this the “pudding of…
