CORNED BEEF HASH WITH POACHED EGGS

One corned beef brisket can provide enough for several delicious meals. Make Corned Beef and Cabbage for dinner, use some  to make this tasty hash for breakfast, then polish off the rest in Reuben Sandwiches for lunch. If you prefer, you can buy corned beef from the deli or even (gasp!) in a can to make your hash. Ingredients: Rutabaga Faux Potatoes made with about 1 pound of rutabaga (or left over from Corned Beef and Cabbage recipe) 1 pound corned beef, cooked and cut into…

CORNED BEEF AND CABBAGE

I don’t usually think about corned beef and cabbage until I see the seasonal specials in the stores in mid-March. It makes an easy, tasty, one-pot meal; I don’t know why I don’t make it more often. Try my walnut trick to keep the cooking odors from permeating the house and to make the rutabagas taste more like potatoes. (Technically, the following recipe is more like a New England Boiled Dinner, which includes potatoes in addition to beef and cabbage.)  Ingredients: 1 (4-pound) corned beef…

HOME AGAIN AND QUICK CHILI

I got in very late last night after a long vacation, which ended with a week in a rustic cabin in West Virginia. We were surrounded by wildlife: deer, bear, groundhogs, rabbits, hummingbirds, vultures, butterflies, etc. outside, and bugs and mice inside. We resorted to storing our food in the oven to keep it from being nibbled. One night we were awakened by a bat swooping over our bed catching insects. We shinned a flashlight on it to keep track of where it was until…

HARVARD STUDY IMPLICATES SALT AND NITRITES, EXONERATES RED MEAT

default image

A new study published in the journal Circulation says that red meat is not the cause of heart disease and diabetes. Lead author of the study, Renata Micha, of the Harvard School of Public Health, said, “Although most dietary guidelines recommend reducing meat consumption, prior individual studies have shown mixed results for relationships between meat consumption and cardiovascular diseases and diabetes.…Most prior studies also did not separately consider the health effects of eating unprocessed red versus processed meats.…Processed meats such as bacon, salami, sausages, hot…

IRISH MUSINGS

default image

We think of corned beef and cabbage as a traditional Irish dish, but it is actually Irish/American. According to Bridgett Haggerty of the Irish Cultures and Customs website, cows were generally used for milk in Ireland and were too valuable to eat. Pork was cheaper, so a side of bacon was cooked with cabbage for Easter. The Irish in New York substituted corned beef for bacon, borrowing from their Jewish neighbors, and it has come to be associated with St. Patrick’s Day. She says that…

CELEBRATING “FAT,” A NEW BOOK BY JENNIFER MCLAGAN

Jennifer McLagan, winner of the prestigious James Beard Cookbook Award for Bones in 2006, has taken a courageous stand in her latest book titled Fat. My first exposure to Jennifer was at the IACP (International Association of Culinary Professionals) conference in Seattle where she was also nominated for an award. I attended a workshop on food photography and at the awards ceremony on the closing day, found myself seated next to one of the presenters from the class. He had warned against using images with…

Red Meat and Cancer

default image

March 30, 2007 – “Breast Cancer is another reason to limit beef,” reads the headline on an MSNBC story dated March 16, 2007. Similar headlines were featured in various newspapers in response to the release of a study analysis that suggested a link between red meat consumption and breast cancer. Researchers found no link between overall cancer rates, but when they looked at only those cancers that were dependent on estrogen and progesterone, they found that women who ate one to one and a half…
