According to a story from the Associated Press last Tuesday, government advisers to the Institute of Medicine are warning that the U.S. is facing a crisis in cancer care. The risk of cancer increases with age, they said, and by 2030, new cases are expected to reach 2.3 million a year. They predict there may be a shortage of oncology specialists to care for all of them. Here is my first new recipe since discovering that I am allergic to eggs, almonds, and possibly dairy products. (The jury is still out on some dairy, but for now, it’s off limits.)
