THE PERFECT WAY TO PIG OUT ON SUPER SUNDAY!

The Anchor Bar in Buffalo, New York. Hot Wings The original Buffalo wings were invented at the Anchor Bar in Buffalo, New York in 1964. They are the perfect low-carb snack for Super Sunday. To turn them into a meal, use drumsticks instead of wings. To super-size your snacks, use turkey wings! Ingredients: 20 to 25 chicken wing “drummettes,” the meaty first section of the wing Heat-stable oil or fat for frying, such as light olive oil or grass-fed beef tallow 1/4 cup butter (1/2 stick) 1…

KABOCHA SQUASH FRIES

We are invited to my daughter’s house for a cookout. There will be hamburgers (D and I will have lettuce wraps) and french fries. I plan to take Faux Sweet Potato Fries made with kabocha squash as our potato alternative. I included recipes for fries and chips made from fresh pumpkin in Carb Wars, and posted some recipes on my blog  here and here, but I recently tried using kabocha squash instead of pumpkin. Kabocha (pronounced, kah-bow-cha) is a Japanese pumpkin that is available most of the year while fresh pumpkins are only available in the Fall. They have about the…

MOROCCAN-STYLE RADISH SALAD

I have a new batch of Preserved Lemons that just reached tangy, salty perfection, and I’m still having fun trying new recipes using them. The latest is below. You can substitute a tablespoon of plain lemon zest if you don’t want to bother preserving the lemons or waiting for them to cure. MOROCCAN RADISH SALAD  Traditional Moroccan-style salads are dense and crunchy and don’t contain leafy greens. Several are often served together in small portions as a first course. Ingredients: 2 cups radishes, trimmed and thinly sliced 2 cups…

DO ONIONS MAKE YOU CRY?

I’ve tried a lot of things to keep from crying when I chop onions, like holding (unlit) matches in my teeth, putting the cutting board near an open flame, or chopping the onions under running water. I’ve even considered wearing a snorkel, a trick I learned from an artist friend to keep from inhaling the toxic chemicals we used for cleaning the ink from our silk-printing screens. The only thing that ever really kept my eyes dry was getting someone else to chop my onions for me. I just learned a better solution from my friend and fellow IACP member, Carol Dearth. Chef Carol has a gorgeous cooking school and store…

THE ESSENCE OF SPRING: RHUBARB SHORTCAKE

My rhubarb plants start testing the air in mid-winter, sending up ruffled probes through the mulch to ask, “Is it time yet?” Those persistent little sprouts are always a cheerful reminder that Spring will eventually come, no matter how remote it seems on a cold, gloomy day. The strawberries are not yet planted, but the rhubarb was ready to harvest before the daffodils budded. I topped my Yogurt Biscuits with roasted rhubarb in a vanilla-scented syrup and whipped cream to make shortcakes, the perfect dessert to welcome the season! RHUBARB SHORTCAKES Ingredients: 1 and 1/2 lb  rhubarb, trimmed and sliced 1-inch thick (about…

BRAISED FENNEL

Fennel, (c) 2012, Judy Barnes Baker Fennel is to vegetables what bacon is to meat. This mild cousin of anise can be used raw in salads or cooked in stews and soups, but it only reaches sweet, glorious perfection when braised, sauteed, or fried. If you have never tried it, you are in for a treat! BRAISED FENNEL Ingredients: 2 fennel bulbs (about 1 pound, trimmed) 1/3 cup olive oil 1/2 cup water Salt Black pepper Grated Parmesan cheese Directions: Cut off the stalks close to the bulb, reserving some of the feathery…

SUGAR-FREE, GLUTEN-FREE, LOW-CARB PUMPKIN PIE

This recipe uses my Almond Pie Crust from Nourished. You can find it here  However the pie in the picture is made with a new one that I’m currently working on. I’ll post it when I have it finalized and written up. PUMPKIN PIE The biggest problem with custard-based pies is the soggy bottom crust. Pre-baking the crust and partially cooking the filling before putting it in the shell is the secret to this rich, creamy pumpkin pie. Ingredients: 9-inch Almond Pie Crust 2 large eggs 1 and 1/2 cups half…

CRISP-BRAISED CHICKEN THIGHS WITH SPROUTED BEANS AND PUMPKIN SEEDS

Crisp-Braised Chicken Thighs with Sprouted Beans & Pumpkin Seeds 4 servings The classic French pairing of duck confit and lentils inspired this dish of crispy-skinned, succulent chicken thighs atop a savory combo of sprouted beans and sautéed pumpkin seeds. Inexpensive chicken thighs cook up moist and tender and the gluten-free, grain-free, low-carb side rivals the original starchy version for depth of flavor, but with a unique texture and a bit of crunch. Tip: I used a dried mix of sprouted lentils and adzuki and mung…

A CRISPY, SALTY, SNACK WITHOUT THE GUILT: KALE CHIPS

default image

Fresh Black Kale Leaves You can make virtuous, crispy chips that taste fabulous from a healthful vegetable!
